Cream Puffs (with Sweet and Savoury Fillings)

Ingredients :

1) 1 cup boiling water
2) 4 level dessertspoons butter
3) 1 cup flour (sifted)
4) pinch of salt
5) 3 eggs
6) 2 teaspoons baking powder

Method :

1. Put boiling water and butter into enamel soucepan and boil.\
2. Add sifted flour and salt, stirring in well, till mixture is smooth and leaves sides of pan.
3. Remove from fire and leave to cool a little.
4. Place cooked flour into bowl and stir, adding eggs, one at a time, beating well, till smooth.
5. Brush top of loaves with whiter of egg beaten slightly with a few drops of milk. bake in hot oven for 40 minutes or until done.
6. when loaves are done, turn them on to a cooling tray. (Size of loaf tins 7" x 3" x 3")
